Life

We have been following the Dave Ramsey financial plan - at least loosely - for over a year (debt free exept the house - WOOHOO!). From a 'cash flow' standpoint, we utilize an envelope system, meaning that, for us, all our miscellaneous and food expenses is pulled from the bank twice a month and put into an envelope. Any money I need to spend for a two week period comes from the envelope. (Read: allowance?! Don't care, Ladies. It totally works to keep us on budget!!!)


Recently, my husband said:
Honey, ever since we went to the envelope system, it seems like we haven't
been eating quite as well!

Ya think?! I have a budget now, dude! We can't eat willy nilly when we don't have the cash to follow through with that 'concept!' (the concept being spending beyond your means...) ... and buy those necessary more-wintery clothes for the children, a few home decor items here and there, a school fundraiser, etc...

Tonite, however, I fed the family like I used to...but with fiscal responsibility! (And it felt great!) A few weeks ago, I bought the newest Martha Stewart Everyday Foods mag. The recipe for marinated chicken, mint cucumbers, and pita bread intrigued me. Tonite, as I went to prepare said meal, I discovered very few of the necessary ingredients in the cupboard. Instead, I grabbed some left over Mrs. Dash Zesty Garlic Herb marinade from the fridge and tossed it onto my budget frozen breasts (chicken breasts), poured ranch dressing (with just a touch of lemon zest) over my english cuke instead of the special Greek yogurt dressing from the original recipe, and went ahead and heated up the pitas I'd purchased. We. ate. it. all. Even The Picky Princess, who, all the way home from musical theatre class loudly and coarsely reminded me what she thinks of chicken, gushed over the final chicken product.

And we discovered pitas are fun. They are, after-all, a pocket.

I'm glad you clarified frozen chicken breasts. LOL Can't stop giggling over that clarification. You'll have to send me that recipe. Both of them yours and hers.

Thanks for stopping over via Frizzy to give me some much needed twin loving advice and support. Frizzy is a very good friend of mine who I met in Italy. I've visited your blog a few times since I learned that you are a long-time friend of hers. Before this, I was actually going to contact you to ask how you put the three individual pictures in your header. I tried so hard to do that, but not having any luck, left my one picture in the middle which looks funny...to me at least. I'd love to change up my header for my blog and would appreciate info you may have for that!
Blog headers aside, thank you so much for your kind words. This has been such a huge time of adjustment, esp. as I worry how my 2 year old will adjust. I am so used to spending all of my time with him and am worried how he will adjust to not being my one and only. I know he will be a very good big brother as he has a wonderful personality, but it's going to be tough. So I'm trying to make lists of things I can start doing now to prepare him...and myself! I will definitely be in touch as I get further along and this all becomes even more real:)

First, I adore your header...I am a fan of white, plain too.
Second, I did the envelope system for years and that is how we established a great savings account and were always debt-free. I know, like you mentioned, some wives criticize the allowance feel of it, but shouldn't everyone have an "allowance"? I loved it...it was fun...almost a game. And my husband would say the same thing about the food...because I wouldn't buy expensive junk food especially if I had something else to spend my $ on that month. I told him he couldn't have it both ways:)

Great job!! Tell me when you call Dave and yell "We're debt free" over the radio so I can listen and cheer.
Dinner sounds like it was delicious. Stan is such a finicky eater that I really do not enjoy cooking for us. Not that he wants to be that way, but everything we eat seems to keep his stomach in turmoil and him awake all night long. It is all connected to chemical poisoning he developed when he was a body and fender man 20 some odd years ago.

That sounds delicious!! You´re doing so well with your budget - I like the envelope idea & hadn´t heard it before. I have a budget, but find it hard to stick to with grocery prices sky-rocketing.
